HANSEL & GRETEL SPAGHETTI
Whatâs not to love about this double-carb pasta? Can you honestly tell me you donât already have these ingredients in your kitchen? Itâs the perfect low-cost midweek meal to throw together in minutes. I often gravitate to this when I see a stale loaf of bread on the counter that needs using up.
SERVES 4
Hands-on time: 15 MIN
4 x 10p-sized rounds of dried uncooked spaghetti (about 460g)
2 tbsp olive oil
2 large garlic cloves, crushed
Zest and juice of 1 lemon
¾ mug of breadcrumbs
4 tbsp extra virgin olive oil
1 tsp chilli flakes
Grated Parmesan cheese, to serve
Cook the spaghetti according to the packet instructions.
Meanwhile, heat the olive oil in a large frying pan over a medium heat. Add the garlic, lemon zest and breadcrumbs and cook until golden and crisp, then remove from the pan so the breadcrumbs donât continue to cook.
Add the cooked spaghetti to the same pan, along with the lemon juice, extra virgin olive oil, chilli flakes and 1/2 mug of the spaghetti cooking water. Toss well, then divide between dishes and top with the crispy breadcrumbs and grated Parmesan. Season with black pepper and serve.
